When you look at a stainless steel spoon, a pane of glass, or a diamond, you see a smooth surface and a color, but what truly makes each one what it is lies hidden inside: how its atoms are arranged. The structure of a material means exactly that arrangement, which atoms are present, how they are bonded, and where they sit relative to one another, from the pattern of a few neighboring atoms all the way up to features you can see with your eye. Structure is the hidden architecture that a lump of matter is built from.
More precisely, structure is not one single thing but a whole nested set of arrangements. At the finest level it is the electrons and chemical bonds; then the geometric packing of atoms (is it an orderly repeating crystal, or a jumbled glass?); then features like defects, grains, and phases; up to the coarse shape and internal layout you can see unaided. Two objects with the identical chemical formula, say soft graphite pencil lead and hard diamond, both pure carbon, differ ONLY in structure, and that difference is enormous.
The study of the structure of materials is a discipline in its own right, distinct from a general materials-science survey: it focuses on the arrangement of atoms and the features that arrangement builds, and on the tools (diffraction, microscopy) that let us see it. The single most important idea in the whole field is that structure determines properties, change the arrangement and you change what the material can do. Honest reminder: structure is never perfectly regular; real materials are full of defects and irregularities, and often those very imperfections are what make a material useful.
Graphite and diamond are both pure carbon, the identical kind of atom, yet one is soft enough to leave a mark on paper and the other hard enough to scratch glass. The whole difference lies in how the atoms are arranged, which is exactly what the word structure means.

A common beginner slip is to think structure means only shape. It means the internal arrangement of atoms at every scale; shape, the visible outline, is only the coarsest layer.
