the structure-property relationship
Why is diamond the hardest natural material while graphite is soft enough to write with, when both are pure carbon? Why does one piece of steel bend while another shatters? The answer, again and again, is not what the material is made of but how its atoms are arranged. The structure-property relationship is the central law of the whole field: a material's properties (hardness, conductivity, color, strength) follow from its internal structure.
Walk it through with carbon. In diamond every atom is covalently bonded to four neighbors in a rigid three-dimensional cage, so nothing slides and it is extremely hard and does not conduct electricity. In graphite the atoms bond into flat sheets held to each other only by weak forces, so the sheets slide easily (soft and slippery) and loose electrons roam within each sheet (it conducts). Same atoms, opposite properties, purely because of arrangement. In practice the link runs both ways: if you want a property, you engineer the structure that delivers it.
This is why the field spends so much effort seeing structure, because seeing it explains and predicts behavior. It also explains processing: we heat, roll, and quench materials not to change what they are but to rearrange their structure (grain size, defects, phases) and so tune properties. Caveat: the relationship is powerful but not always simple, a property may be set at one length scale (say grain boundaries) while another is set at a different scale, and real behavior can depend on several structural features at once.
Take two steel bars of identical composition. Heat-treat one to be hard and brittle, the other to be soft and tough. The chemistry is the same in both; only the internal structure differs, and with it the property.

Structure determines properties does not mean chemistry is irrelevant, composition sets which structures are even possible. The point is that composition alone does not fix properties; the arrangement does the deciding.
