monolayer

Sprinkle a trace of oil on a still pond and it can spread until it is just one molecule thick, shimmering as a rainbow film. A film exactly one molecule deep is a monolayer, and surfactants are champions at forming them at the surface of water.

Because surfactant molecules orient with their water-loving heads in the water and oil-loving tails sticking out, they pack side by side at an interface like a forest of tiny matchsticks, forming a film one molecule thick. As more surfactant is added the molecules crowd closer, the film becomes more condensed, and the surface tension falls; once the monolayer is fully packed, further molecules go into the bulk and form micelles. Such films were famously studied with the Langmuir trough, which compresses a monolayer and measures its surface pressure.

Monolayers underpin much of interfacial pharmaceutics. The surfactant monolayer at an oil-water boundary is the heart of the interfacial film that stabilises emulsions, and monolayer studies of phospholipids model cell membranes and lung surfactant used in respiratory distress therapy. The caveat is that an idealised, perfectly packed monolayer is a model; real interfaces may have patchy, mixed, or multilayered coverage.
