water as the solvent of life

Pour a spoon of salt into a glass of water and it vanishes; pour it onto a dry plate and it just sits there. Water has a quiet superpower: it dissolves an astonishing range of substances and lets them mingle and react. Every living cell is, by weight, mostly water — roughly 70 percent — and almost everything that happens in molecular biology happens dissolved in, or surrounded by, that water.

A solvent is simply the liquid that does the dissolving, and water is the cell's solvent. It works so well because its molecules are slightly lopsided in charge (they are polar), so they cluster around charged ions and other polar molecules, prying them apart and keeping them suspended. Substances that water dissolves are called hydrophilic ('water-loving'); ones it refuses, like oils, are hydrophobic ('water-fearing'). Inside the watery interior of a cell, ions, sugars, amino acids, and the surfaces of giant molecules like DNA and proteins are all bathed in water that shapes how they move and meet.

This is foundational because the watery medium is not a passive backdrop — it actively decides what a molecule looks like and does. Proteins fold the way they do largely to hide their oily parts from water; DNA's two strands stay together partly because water makes their stacked bases huddle. Take away the water and these structures collapse. So a molecular biologist never reasons about a molecule alone; they reason about a molecule and the water around it.

A protein purified and then dried into a powder is biologically dead; add water back and, if conditions are right, it can fold up and start working again — proof that the water is part of the machine, not just its container.

Water is not the stage — it is part of the cast.

Calling water 'the universal solvent' is an overstatement: it dissolves polar and charged things beautifully but barely touches oils and fats — and that selectivity is exactly what makes cell membranes and protein folding possible.
