Heat a pot of water and for a long time nothing dramatic happens — it just gets warmer. Then, at exactly 100°C, something switches: the water starts boiling and turns to steam. That sudden change from one form of matter to a clearly different one, brought on by nudging the temperature or pressure, is a phase transition.

A phase is a state in which matter is organized in one particular way — ice, with its atoms locked in a rigid pattern, is one phase; liquid water, with molecules sliding past each other, is another. A phase transition is the point where a small change in conditions tips the whole substance from one such arrangement into another. The remarkable thing is how abrupt it can be: a fraction of a degree separates solid ice from running water, even though both are made of identical molecules. The transition happens because at the switching point the two arrangements cost the same in energy and disorder, so the balance tips wholesale.

Phase transitions matter because they are everywhere — boiling, freezing, a magnet losing its magnetism when heated, a metal becoming superconducting when chilled. A common misconception is that they only mean solid, liquid, gas. In fact matter can also change in subtler ways, such as suddenly becoming ordered or magnetic, and physicists count all of these as phase transitions.

Put a tray of water in the freezer and watch the temperature. It drops steadily until it hits 0°C, then stalls there for a long time even as heat keeps leaving — that flat stretch is the phase transition, the water turning to ice. Only once all of it is frozen does the temperature start falling again.

During a phase transition, temperature can stall even while heat is flowing — the energy goes into rearranging the matter, not warming it.

Not every change in matter is a phase transition. Slowly warming a gas just makes it a hotter gas — still the same phase. A transition needs a genuine switch in how the matter is organized, often happening sharply at one special temperature or pressure.
