An alkaloid is a naturally occurring compound, usually from a plant, that contains a basic nitrogen atom — and that basic nitrogen is the whole reason the class has a name. The word literally means 'alkali-like', because these compounds, dissolved in water, behave as bases. Caffeine in your coffee, nicotine in tobacco, morphine from the poppy, quinine from cinchona bark, and the dramatic poison strychnine are all alkaloids; so are cocaine, atropine, and the chemotherapy drug vincristine.

Chemically, what unites them is amine chemistry: somewhere in the molecule sits a nitrogen with a lone pair, very often inside a ring (a heterocyclic amine such as a pyridine, pyrrolidine, or piperidine unit). That nitrogen makes the alkaloid basic, so it can be extracted from plant material by playing the acid-base game — treat the crushed plant with acid to protonate and dissolve the alkaloid as a water-soluble salt, then add base to free the neutral alkaloid back into an organic solvent. This is exactly how morphine or caffeine is isolated, and it is the same protonation/deprotonation switch that lets the body absorb, distribute, and excrete these molecules.

Alkaloids matter enormously because so many of them are biologically potent — they often bind tightly to receptors and enzymes precisely because that basic nitrogen can grab a proton and form a salt bridge in the binding site, just as the body's own amine neurotransmitters do. Plants seem to make them largely as chemical defences against being eaten. For organic chemistry, alkaloids are the headline example of why amine nitrogen is so central to drugs and biology: the lone pair that makes an amine basic is also what makes these molecules bind, dissolve, and act.

Caffeine, nicotine, morphine, and quinine are all alkaloids; each is extracted from its plant by acidifying to dissolve the protonated amine as a salt, then basifying to recover the free base into an organic layer.

The basic amine nitrogen is both the family's namesake and the handle used to extract it.

Alkaloids are defined by a basic nitrogen, not by being plant-derived per se — and 'natural' does not mean safe: strychnine, nicotine, and atropine are alkaloids and are highly toxic.
